Potato Salad


5 lbs. red potatoes
6 lg. celery stalks, diced
10 hard boiled eggs
6 green onions or 1/2 purple/white onion
1 1/2 c. mayo
2 tbsp. yellow mustard
1 tbsp. stone ground mustard
3 tsp. celery seed
1/4 c. apple cider vinegar
Stevia or 2 tsp. sugar

Bring potatoes to boil in large pot. Reduce to medium/light boil and cook 10-15 min or until potatoes easily pierced. Add eggs to hard boil for last 7 minutes.

Drain water and set all aside to handle.

Cut potatoes into bite size pieces, put in large mixing bowl and sprinkle with apple cider. Let stand for 10-15 minutes.

Add celery and onions to potatoes.

In a medium bowl, mix mayo, mustard, celery seed, salt, pepper and if you prefer a little sweetness, add Stevia or 2 tsp. sugar.
Add dressing to potato, celery and onion.

Chop hard-boiled eggs and fold into potato salad.
