TURKEY MEATLOAF
2 Tbsp. butter
1 C. Chopped onion
3 cloves garlic, minced
1 1/2 lbs. ground turkey
1/2 c. cooked rice or rolled oats
1 egg
2 tsp. Worcestershire
1/4 C. Ketchup
1/2 tsp. black pepper
1-2 cups chopped veggies (spinach, peppers, etc.)
Melt butter in skillet and cook onion and garlic for 5 minutes.
Combine turkey, rice/oats, egg, ketchup, Worcestershire, salt, pepper.
Add veggies, onion and garlic and press into loaf pan or make into meatballs.
Bake at 350 for 50-55 minutes (internal temp should be 165). Remove from oven and let stand for 5 minutes before serving.
